Taiwan Ngor

Hi Guys,

Was doing some pond fishing recently and caught a ‘taiwan ngor’ or red drum. I don’t really know how to cook this fish. Does anyone have any good recipies and suggestions? [:)]

seems quite a while already to post this reply. I usually caught red drum when fishing at Pasir Ris pond in Singapore years ago.
I would normally cook fish porridge with this fish. Firstly, fillet the fish and slice the flesh into chunks. Use the bone that has some flesh left to boil in a pot of water as stock. Once water boils and let it do so for about 30 mins then add the rice grains to cook into porridge. Add salt to taste and add in the fish meat. The meat will cook very fast. Garnish with fried sliced shallots and chinese paisley. Some may add salted “tong chai” for added flavour.
