How do you find the grip on the handles of the Globals? I’ve not really used one but I personally find them weird. Hahaha
Wusthof are some really fine knives but the price is also really ‘nice’.
I use Zwilling JA Henckels for all my kitchen and sausage making needs and so far I’m quite happy with them as well. I keep them razor sharp as well since I use them so much. A quick touch up with a steel serves me fine.

Guys, where can i get those ceramic sharperners in the klang valley? How much do they generally cost? Ubob has ran out of those spyderco ones.

I’ve never been good at knife sharpening. One day I bought this Tri Angle sharpening system (ceramic) by Spyderco, from this shop in Sunway which is about to close down. The white haired old man there literally pleaded with me to buy it.
So far, no regrets. I can now make my knives really sharp, just followign the instructions, with bevel edge of 30 deg and cutting edge of 40 deg. My only criticism is that sharpening very long knives is a bit cumbersome and time consuming, but I’m OK with that.
But once in a while, I still go the old man for personal finishing touch of my knives.

WWY, The handles of the Globals are comfortable in texture but I find the shape takes getting used to. Otherwise they are fine and do not slip. I think they are a good design for grip and comfort for a steel handle. I just make sure I wash and sanitise the handles of my knives frequently as sometimes stuff can get stuck in the little dots of the handle. Henckels knives are great and my first three knives were Zwilling Henckels. There is a distinct difference in workmanship quality I find between the starter range like the Pro S and the Higher range like the 5 star or Twin Range. Get what you pay for I suppose.
I am also very partial to Wusthof Trident Knives. Extremely sharp and easier to maintain than Henckels if you steel them frequently.
Evan, Saw some Ceramic and Diamond Honing rods in Mid Valley Henckels shop Level 2. Also some Japanese Sharpening stones of various grit in Metro Mid Valley. The prices are not for the faint of heart though.
By the way have just started collecting a few Hand forged Japanese Kitchen Knives. Very Pretty but expensive. Super sharp though.

By the way, Anyone have any preference in how you sharpen on a stone? One Direction? Back and forth? Round in circles?
A farmer once showed me a circular motion in sharpening his folding knives. Using Singer Oil too. You could split a hair with his blade. Can’t get it right myself though.

I don’t have to steel my knives very often actually, maybe once a week or every 2 weeks. That’s because I usually cut meats that’s already been deboned. But I cut a lot of frozen of partially frozen meat.
I use the Pro S and at the moment that’s the only Henckels knives within my budget.
I find that you can sharpen almost all kinds of knives to a razor sharp finish but most knives can’t hold the edge for long. The RM25 knife I got from Jusco is razor sharp but need steeling much more often to keep it that way. A henckels knife will stay sharp for months after steeling if it is used in a normal home kitchen.
Wusthof trident knifes are really nice but RM700 for a 8" chef knife is a bit out of my reach at the moment. Come to think of it, Henckels just raised their prices couple months ago and they’re not that far away from the prices of those Wusthofs now.
I sharpen my knives (cheap ones) on a stone in a circular motion and finish off with the steel. My henckels only get the steel.

HI Izzy,
I use a similar system at home, The GATCO set. It’s good and gives a near perfect bevel and cutting edge. Finished knives are sharp enough to shave but not split hairs as it has only up to a fine stone, no extra fine, which is optional. Can’t get it here so for that I’ll hone the knife with the Spuderco Ultra fine benchstone. Don’t really need things that sharp for practical use though, just for the fun of it. A bit more cumbersome to set up than the Spyderco Tri-Angler.

I personally prefer the slicing motion in one direction. I find this easier to keep the angle correct than using circular movement. Hair splitting can be achieved too when using a good ceremic ultra fine stone, no oil required.
In younger days, used to help out? in my Father’s workshop (furniture) and assist? the old sifus in keeping their wood working tools sharp. Instead of Singer oil, which is expensive as it come in small packings, we use the lightest grade engine oil. The Apache brand stone (made in England) was then the best.
