I have fished in a Perception Swing sit on top as well as a Perception Vista. Both are kayaks. The are great water crafts to fish from for the first few hours. As you have to sit low, you may after that have a problem with your painful back and waist. It is very exciting to fish from the kayaks and every fish on line gives you tremendous thrill.
Here is a little suggestion.
Do try the canoe before you decide on a kayak. This is not to convert you but just to inform you of another great fishing craft. Canoes may be difficult to paddle alone, but they are more spacious and allow you to have more space for stretching the various parts of your body.
If you want to fish from kayaks most of the times and for long hours, do have another boatman with outboard to tow you to the destination and back. This saves you the energy and you may use it on intensive fishing. I did that to my friends and they were so grateful; finally they opted to be towed for river cruising instead !
For kayaks, it is not necessary to instal outrigger unless you also plan to sail. Kayaks are very stable crafts. Please do not think you can stand on the kayaks to fish once you install the outrigger, the material may be to filmsy for your weight.
Just 2 cents from a novice.
If you plan to spend long hours fishing on your kayak, I would recommend investing in a good seat. Go for the hi-back config.
Most kayak manufacturers’ outfitted their recreational kayaks with rodholders and other fishing stuff and rebrand them as fishing kayaks. However, for the gamefishers, I would recommend the Malibu X-Factor, OC Prowler and Cobra Marauder. These kayaks are specially built for the “Big Game”. They are bigger and wider. The upside is, they are very stable. A very important factor in big game fishing. The downside is, you lose on performance. Sorry, you can’t have it all.

Kayaks are supposed to be built slim and for speed in the past. Good for hunting the seals. Lacking a precise defination of what is a kayak and what is not, you find nowadays various forms of watercrafts resembling kayaks that are built to suit different purposes. Yet they are kayaks.
Not surprising that you may stand on a kayak nowadays as it is built beamy. My two sit on top kayaks were acquired at the time when the kayak fishing craze was catching on. One friend of mine was admiring the sit on top after a trip and tried to stand on it to show his balancing skills. Thereafter the joints at the scupper hole (is that what you call it?) sprung a leak. And my friend also failed to balance himself as it was not built for that purpose. In fact he fell down to water repeatedly. Then I replaced the leaky sit on top with a Vista, a tandem kayak for more space. For short sprint a slim kayak can go abreast with a v hull powered with 2 hp. That is how wonderful a kayak is. The beamy one will be too fat to go fast. Hahahaha…
I suppose if one were to fish at sea, then I say the kayak is more suitable. But I find canoe a more relaxing craft in freshwater. Anyway I have not tried the hybrid which is CAYAK. May be the more beamy kayak is to be called cayak. Just my little knowledge about the fishing kayak.
The Eskimos built their kayaks to fit their body. They actually “wore” their kayaks like they would wear their trousers. The kayak should feel like a part of the body. This simple design allowed the Eskimos to perform the “Eskimo roll” when their kayaks capsized. You see, the Eskimos couldn’t swim and this simple design enabled the Eskimos to hunt the whales. Believe it or not!

I don’t have a Kayak but normally bring along my inflatable boat on shallow waters to cast for mini predators.

This works for me all almost all the time..
It’s very light and mobile.
My cheap old faithful Donut Boat..

and the catch could have poked the boat to sink.. haha!!
